Step 1
You will need to preheat your large cast iron skillet over medium heat.
Step 2
While the pan is heating, peel and slice thinly 1 large onion. And the pepper if you will be using that.
Step 3
Put about 1 tablespoon of olive oil in the hot pan and swirl around to distribute. Add about ½ of the onions in a layer on the cast iron pan. Sprinkle ½ teaspoon of Acme Superior Salt Mix evenly over all of the onions in the pan. Allow the onions to cook until they start to be translucent. There is no need to stir them.
Step 4
Divide the ground beef into 8 equal portions and shape into 8 equally shaped balls.
Step 5
Place 4 hamburger balls equally spaced on top of the onions. Using a burger weight, smash the burger onto/into the cooking onions. Sprinkle about ¼ teaspoon or so of Acme BBQ Rub #103 on each patty. Allow burgers to cook for about 2 minutes.
Step 6
After the burgers have cooked for 2 or 2 ½ minutes on top of the onions, with a wide metal spatula, carefully lift the onion and burger and flip so the patty is on the pan. Do this for all of the burgers. Turn up the heat to medium high and allow the burger to finish cooking for about 2 more minutes.
Step 7
Turn off the heat to the burgers, and place 2 slices of cheese on top of each burger. Allow the burgers to rest in the pan for 2 minutes.
Step 8
Toast your buns on a dry frying pan or griddle. And once toasted, spread the fry sauce liberally on the buns. You’re gonna need some napkins!
Fry Sauce Method
Step 1 Mix all ingredients together in a small bowl with a wire whip until well mixed. Keep left overs refrigerated for up to a week.
