Step 1
Place a baking rack in the center of your oven. Then preheat the oven to 350º.
Step 2
Dice the medium onion and saute until the onion is soft and beginning to be translucent. Remove from the heat and set aside.
Step 3
Measure the milk into a large mixing bowl. Add breadcrumbs to the milk, stir and then let them soak for 5 minutes. You will see that they become a paste-like consistency.
Step 4
Crack the eggs into a small bowl, and stir them with a fork, making sure the yolks are broken and they are mixed well. Pour the eggs into the bowl with the soaked bread crumbs. Mix the two together well.
Step 5
Add the ground meat, and the remaining ingredients. With your hands, mix all the ingredients well. Being sure to incorporate the egg-breadcrumb mixture from the bottom of the bowl into the meat and seasonings. Once incorporated, form the mixture into a large ball shape.
Step 6
Onto a rimmed baking sheet place a sheet of parchment paper. Set the ball of meat onto the rimmed baking sheet. Form the ball into a long rectangular loaf.
We suggest the loaf is about 3 inches tall in the center.
Step 7
Place the baking sheet in the oven and bake until the internal temperature of the loaf is 160º. Time will vary depending on the size of your loaf.
Step 8
While the meatloaf is baking, prepare the glaze.
Step 9
Put all of the Glaze ingredients into a medium sauce pot and bring to a boil while stirring. Reduce the heat to low and simmer until the contents have reduced by ¼ and is thick. Take off the heat, but keep in a warm location.
Step 10
Once the loaf has reached an internal temperature of 160º, remove from the oven and top the loaf with the glaze. And then return to the oven for another 5 to 7 minutes to brown the glaze slightly.
Step 11
Remove the meatloaf from the oven and allow it to rest for about 10 to 15 minutes before slicing to serve. Our favorite accompaniment is mashed potatoes! See the recipe HERE
